Hello “Power Foods Fitness” Fans,
A delicious and quick real foods creation not food product! Perfect as a side dish for every meal!
3 medium Eggs
2 teaspoons Coconut Flour*

1/2 teaspoon Cinnamon
1/4 teaspoon Ground Ginger
1/4 teaspoon Sea Salt
2 cups shredded Sweet Potato (food processor is ideal)
Coconut Oil for frying pan (amount will vary)
1. Beat eggs in a medium sized mixing bowl with coconut flour, cinnamon, ground ginger and sea salt. Mix in shredded sweet potato until well combined.
2. Add a small amount of coconut oil to a large pan over medium-low heat. Spoon the mixture into the pan into “cakes” which are approximately 4-6 inches in diameter, cooking for approximately 3-4 minutes each side or until they hold together, flipping as you would a pancake.
Enjoy the texture and taste sensation with protein such as chicken or fish and a handful of rocket drizzled with olive oil! xx
