The “Power Foods Fitness” lifestyle wants for you to still have the pleasure of twirling a big forkful of pasta… made from our smart carb – sweet potato. Sweet Potato Linguine is beyond pasta in nutritional value and takes less time than boiling a big pot of water to cook your regular pasta.
1 medium Sweet Potato, long in shape
1 tbsp Unsalted Butter
6 Sage Leaves (or more to taste)
Kosher Salt and freshly Ground Pepper to taste
1. Wash sweet potato under running water and peel. Slice sweet potato, lengthwise, as thinly as possible using a mandolin. I love my “Zyliss” 2 in 1 handheld Slicer/Julienne.
2. Cut the long, thin slices into even strips approximately 1/4 inch wide as linguine. Set aside.
3. In a large saute pan, melt butter on medium-low heat and add the sage. You need to watch the butter closely as sage begins to brown to avoid it burning. When the sage is crisp, remove and set aside. Add the linguine-like strips to the butter and heat thoroughly. Stir and toss for 2 – 3 minutes. When tender and warmed through, plate and garnish with the fried sage.
Sweet Potato Linguine may be served as a meal on its own provided the remainder of your day has delivered adequate protein for your health and fitness goal. You may also serve this as a side dish to chicken/turkey breast or steak to add an Italian flair and texture to your dining experience.
